Ingredients
1tbspcanola oil
1medium onionthinly sliced and jullienned
2clovesgarlicminced
1/2scotch bonnet pepperseeded and finely chopped
2small tomatoesdiced
1/2tspdried thymeor 2 fresh springs
4cupscallaloofinely chopped
1/2tspsalt
1/2tspground black pepper
1/4cupwater
Instructions
In a large frying pan, saute the onions over medium heat for about 5 minutes. Add in the garlic, scotch bonnet pepper, tomato, thyme, salt and pepper and continuing to cook for another 2-3 minutes.
Top with the callaloo, gently toss and add the water. Reduce heat to low.
Cover and steam for about 8-10 minutes, or until desired tenderness.
Notes
The finished callaloo should stay on the green side of the spectrum. You've overcooked it if it starts to turn brown.
