I love spicy food. And I love sauces. As I began to expand my cooking repertoire many years ago, I knew that I wanted to try my best to make foods from scratch.

When it came to spicy buffalo sauce, I always came across recipes that called for Frank’s Red Hot Sauce. Now, no disrespect to “Frank”, but I wanted to try making a batch of Buffalo sauce without that as an ingredient. After some tinkering with measurements, I finally came up with a delicious, from-scratch recipe for buffalo sauce.

This can be used poured over a hot batch of chicken wings, or as a condiment for salads, or added to a mix of meatballs.

Ingredients
  

  • 1/2 cup ketchup
  • 3 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp cayenne pepper or crushed hot pepper flakes
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Worcestershire sauce
  • 1/4 cup salted butter

Instructions
 

  • In a small saucepan combine the ketchup, apple cider vinegar, honey, hot pepper flakes, garlic powder, onion powder and Worcestershire sauce. Bring to a simmer over medium heat, whisking occasionally.
  • Stir in butter until the sauce starts to come together and remove from heat.

Notes

  • Depending on how spicy you like your sauce, you can chose to use more or less cayenne pepper.
  • This stores well in the fridge. Once cooled just pour into an air-tight mason jar and use at your leisure!

  1. Just tried the recipe and Iโ€™m impressed. I was looking for a recipe without Frankโ€™s and this is the one. Iโ€™m frying or maybe broiling chantrelles to sub as chicken wings.

Thank you veey much for being literally one of the only recipes that does not include franks red hot i typed in "homemade buffalo sauce without franks" and still had to go through almost ten other recipe sites before i found yours. Im saying your should have been first ob the list! Friggin google! But anyways thanks. Trying recipe right now.

I rather stick to the basics and not use a hot sauce for a hot sauce/buffalo sauce recipe. :D I actually shot the video for this recipe earlier this week, so will be updating the photos as well too!
    2. Yes thank you soo much for NOT using franks hot sauce. I cannot tale some " heat" . i prefer to create w/ my ingredients for my level of heat. My boyfriend lives super spicy so he can add more to a separate jar for his liking.๐Ÿ™๐ŸŒˆ๐ŸŒ›

  3. To everyone saying they want a recipe without Frank's hot sauce. You know there are other brands right ? I just used IGA brand hot sauce, and to me it was just as good as Frank's.

  4. Finally, I found a recipe without Frank's! We like it hot and doubled the cayenne, and are planning to quadruple the cayenne next time! It is delicious and addictive! Thanks for the recipe!!

  5. Thanks for having a recipe that doesn't use Franks! I can only get hold of it mail order where I live and there appears to be a large number of people who have no idea what from scratch means.
