Red Velvet Chocolate Chip Muffins

With Valentine’s Day just a mere hours away, thinking up ways to enjoy the holiday through food (whether you’re paired up or not) usually involves the colours red, pink and lots of chocolate! I’ve never been a huge fan of red velvet cake (because to me it was just a chocolate cake with red food colouring), but this simplified muffin recipe gave me a change of heart. Using sour cream instead of the buttermilk that is usually found in the cake recipes, works similarly to helps keep this cake moist.And the chocolate chips… well you could never go wrong with those!

Ingredients
1 1/2 cup all-purpose flour
2 tablespoons cocoa powder
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup canola oil
2/3 cup granulated sugar
1 egg
1/2 cup sour cream
1/2 cup milk
1/2 teaspoon vanilla
1 tablespoon red food colouring
1 cup chocolate chips
Directions
- Preheat oven to 400°F. Line a muffin pan with 12 paper liners.
- In a large bowl, combine the flour, cocoa powder, baking powder, baking soda and salt with a whisk. Set aside.
- In a separate bowl, whisk together the oil, sugar, egg, sour cream, milk, vanilla and food colouring.
- Add the wet ingredients to the dry ingredients by stirring until moistened and properly combined.
- Fold in chocolate chips.
- Divide batter evenly into muffin cups.
- Bake for 20-22 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes then transfer them to a wire rack to cool completely.
